Small volume press, natural settling, 
Alcoholic fermentation at room temperature, 
Blocking of malolactic fermentations, 

Bottled on 05/12/2015
Aging on lees for 8 months then on slats for 7 years 
Disgorging 6 months before marketing

on 07/04/2022 Fruit Day 
Wine   dosed at disgorgement  2 g/l
